Bageshwar: Stained lemon is consumed extensively in many hilly areas like Bageshwar of Uttarakhand. As soon as the winter season starts, the demand for this dish increases in the mountains. Some people call it lemon san, some call it stained lemon, and some even call it lemon chook. This is a winter favorite dish, which the hill people eat as a salad with food or just sitting in the sun. It is especially considered a welcome dish, which the villagers serve to their guests.
What is stained lemon?
Talking exclusively to Local 18, local woman Kiran Pandey tells that to make this dish, lemon is cut and mixed with bhang chutney and curd. Stained lemon is a traditional Pahari dish, in which lemon is prepared by mixing it with many ingredients. The most important role in making this is played by Bhang chutney, which not only enhances the taste of this dish but also gives it a different identity. The mountain people like to eat it in the winter season.

To make this recipe, mainly two big lemons, bhang chutney, finely chopped pieces of radish and carrot, pomegranate seeds, thick and fresh curd, salt as per taste, jaggery or sugar, roasted cumin for aroma and taste, Garlic and coriander leaves are taken.
This is how it gets ready
First of all, take two big lemons, remove their outer peel and cut it into small pieces. Grind hemp seeds in a mortar and pestle, add some salt and water to it, add whole red chilli and roasted cumin seeds to the chutney and grind it. Put chopped lemon, radish, carrot and pomegranate seeds in a big vessel. Add prepared bhang chutney, curd and a little jaggery or sugar to it.
Mix all the ingredients well with hands so that the lemon flavor dissolves in all the ingredients. In this way, the famous dish of Pahat, Stained Lemon, is prepared easily. Eat the dish within 30 minutes of preparing it. Eat it as a salad or simply enjoy it.
