To make Bajra Rabdi, one will primarily need 1 cup of Bajra flour, 2-3 cups of buttermilk or whey, 2 cups of water, salt to taste, and 1 tablespoon of ghee. While iron and steel utensils suffice, preparing it in a clay pot or vessel enhances its flavour.
Method of making
Mangi Devi, an elderly woman skilled in making Bajra Rabdi, explains the process. Firstly, the millet flour should be dry roasted in a pan over low flame for five to seven minutes. This eliminates the rawness of the flour, releasing a light aroma. Next, one should mix buttermilk and water in a vessel. Then the roasted millet flour should be added to it and mixed thoroughly to avoid lumps.
The mixture should then be placed on low flame to cook. It should be stirred continuously to prevent it from sticking to the bottom. It should be cooked until it thickens. Once cooked, salt should be added to taste and mixed well.
Following this, one should heat ghee in a small pan and add cumin or garlic seasoning. Then the mixture should be poured over the prepared rabri. This completes the preparation of hot and flavourful rabri. This dish is not only traditional and healthy but also incredibly tasty.
