Thukpa must be eaten during the cold months. It contains many vegetables and meat along with noodles. If you are a vegetarian then replace meat with only vegetables. It is a part of the traditional diet of the Himalayan regions, because it is extremely cold in those places and people eat such dishes to stay warm. Thukpa not only warms your body, but it also warms your heart. This is the reason why Thukpa has become a great dish to be served on cold evenings.
Thukpa is made from a variety of vegetables like carrots, cabbage, spinach and beans, which are rich in vitamins and minerals. The meat present in it gives you protein, while the noodles are a good source of carbohydrates, only then it becomes a balanced meal. Apart from this, spices like ginger, garlic and turmeric present in it boost the immune system. The broth present in Thukpa keeps you hydrated and also soothes your throat and sinuses during cold and flu season.
Thukpa recipe
– 1 cup boiled noodles (rice or wheat)
– 2 tbsp oil
– 1 small onion, chopped
– 2 small tomatoes, chopped
– 1 tsp ginger-garlic paste
– Vegetables (carrot, cabbage, spinach)
– 1 cup chicken or tofu
– 1 tsp soy sauce
– 1 tsp salt
– 1/2 tsp black pepper powder
– 4 cups water or chicken stock
– 2 tbsp peas
– Fresh coriander, chopped (optional)
How to make Thukpa?
1. Heat oil in a large pan.
2. Add onion, tomato, ginger-garlic paste and cook on medium flame until onion and tomato become soft.
3. Add peas, carrots, capsicum and cook on medium flame until the vegetables become soft.
4. Add meat or tofu.
3. Add soy sauce, salt, black pepper powder and mix well.
4. Add water and bring the mixture to a boil.
5. Add noodles and cook on medium flame until noodles are soft.
7. Add fresh coriander and mix the mixture well.
8. Serve thukpa hot and enjoy.
