Kapil Doval and his wife, resident of Mohkampur, Dehradun, are preparing and serving dishes from different hill districts of the state.
Traditional food is available
Both of them are working to bring the traditional food of Dharchula, Munsiyari, Neeti Mana, Harsil, Guthu, Ghansali and Jaunsar of Uttarakhand to the people of Dehradun. Along with his wife Deepika, Kapil prepares 47 types of traditional cuisine including Dhindka, Askali, Lemda in his restaurant. In this also Dhindka is priced at Rs 30 per plate which is very much liked. A large number of people come to eat it.
Wife is fond of cooking
While giving information to Local 18, Kapil Doval has said that his wife Deepika grew up in Rajasthan and was very fond of cooking. She used to cook many types of dishes, then she started preparing the Pahari dishes of Uttarakhand and started serving them to the family. After Covid, after doing research with his wife, Kapil started preparing recipes from the hilly villages of Uttarakhand and started serving the tastes in fairs. Today he is running a restaurant in the name of old grandmother.
Work stalled due to Corona
Kapil tells that he used to run a coaching center but his work came to a halt due to Corona. He is very happy with his work. He told that he prepares 47 types of Uttarakhandi traditional food including Dhindka, Askali, Lemda in his restaurant. Kapil told that he has worked to serve local dishes in the form of snacks from areas like Dharchula, Munsiyari, Neeti Mana, Harsil, Guthu, Ghansali and Jaunsar of Uttarakhand.
He further says that people are understanding the things that Prime Minister Modi had said to promote millets etc. Gradually people will understand the importance of their hill products. Kapil tells that he has fed the Crispy Dhindka and Bhang chutney prepared by Manduay and Gahat to more than 700 people and everyone has liked it.
Possibilities of reverse migration from hill products
Kapil told that he comes from a small village in Pauri district. People from his village have migrated to cities for jobs. His village is counting its last breaths. However, he believes that we should always remain connected to our roots. He said that the land of his ancestors was lying barren for the last 52 years and he grows pulses, mandua etc. in it.
